{"id":74,"date":"2013-06-06T13:59:51","date_gmt":"2013-06-06T03:59:51","guid":{"rendered":"https:\/\/www.icemoonprison.com\/blog\/?p=74"},"modified":"2021-01-25T19:22:02","modified_gmt":"2021-01-25T08:22:02","slug":"recipe-butter-chicken","status":"publish","type":"post","link":"https:\/\/www.icemoonprison.com\/blog\/archives\/74","title":{"rendered":"Recipe: Butter chicken"},"content":{"rendered":"<p>Here at Ice Moon Prison, we like a good curry, especially that most British of curries, <a title=\"Butter Chicken on Wikipedia\" href=\"http:\/\/en.wikipedia.org\/wiki\/Butter_chicken\">butter chicken<\/a>.\u00a0 Home recipes for butter chicken tend to be awful, and usually end up being given to the Ice Moon Prison Hound.\u00a0 When we came across a <a title=\"Original recipe at MasterChef\" href=\"https:\/\/10play.com.au\/masterchef\/recipes\/butter-chicken\/r190614xsngo\">recipe<\/a> from MasterChef&#8217;s Jimmy Seervai, we were sceptical.\u00a0 But it proved to be authentic, and ever since, we&#8217;ve been tweaking it to taste more like what we can get from our local Indian restaurant, Tandoori Cottage (<a title=\"Tandoori Cottage on UrbanSpoon\" href=\"http:\/\/www.urbanspoon.com\/r\/71\/1427029\/restaurant\/Melbourne\/Tandoori-Cottage-Malvern-East\">Urbanspoon page<\/a>).<\/p>\n<p>The latest version, heavily adapted, is presented here.\u00a0 The most important spices are the fenugreek leaves (methi) and Kashmiri chilli powder; there really is no substituting them.\u00a0 Ice Moon Prison uses and recommends <a href=\"http:\/\/www.herbies.com.au\/\">Herbie&#8217;s Spices<\/a> (unlike MasterChef <a title=\"Herbies Newsletter Winter 2011\" href=\"http:\/\/www.herbies.com.au\/newsletters\/newsletter-winter-2011\/\">since 2011<\/a>).<\/p>\n<p><b>Prep Time:<\/b> 3 hrs | <b>Cook Time:<\/b> 1 hr | <b>Difficulty:<\/b> Medium<\/p>\n<p><!--more--><\/p>\n<h1>Ingredients<\/h1>\n<p><strong>Garam Masala mix<\/strong> (or just use 2 tsp of any Garam Masala, but the flavour will vary)<strong>:<\/strong><\/p>\n<ul>\n<li>1 tsp Herbies Garam Masala<\/li>\n<li>1\/4 tsp cinnamon<\/li>\n<li>1\/4 tsp cloves<\/li>\n<li>1\/4 tsp black pepper<\/li>\n<li>1\/4 tsp green cardamom<\/li>\n<\/ul>\n<p><strong>Tandoori Chicken:<\/strong><\/p>\n<ul>\n<li>1 kg chicken thigh fillets, cut in three<\/li>\n<li>Juice of 1 lime<\/li>\n<li>1 tablespoon Kashmiri chilli powder<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>1\/2 cup thick Greek yoghurt<\/li>\n<li>1 teaspoon garlic paste, minced on microplane<\/li>\n<li>1 teaspoon ginger paste, minced on microplane<\/li>\n<li>1 teaspoon Garam Masala mix<\/li>\n<li>1\/2 teaspoon dried fenugreek leaves<\/li>\n<\/ul>\n<p><strong>Butter sauce:<\/strong><\/p>\n<ul>\n<li>2 tablespoons sunflower oil<\/li>\n<li>1 large brown onion, chopped<\/li>\n<li>1 teaspoon ginger paste<\/li>\n<li>1\/2 green chilli, finely chopped<\/li>\n<li>3 green cardamom pods, lightly crushed<\/li>\n<li>1\/2 tsp blade mace<\/li>\n<li>1\/2 tsp nutmeg<\/li>\n<li>2 tablespoons cashew paste<\/li>\n<li>800 g can whole tomatoes<\/li>\n<li>1 cup chicken stock<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>2 teaspoons honey<\/li>\n<li>1 teaspoon Garam Masala Mix<\/li>\n<li>1 teaspoon Kashmiri chilli powder<\/li>\n<li>1 teaspoon dried fenugreek leaves<\/li>\n<li>25 g unsalted butter<\/li>\n<li>65 mL cream<\/li>\n<\/ul>\n<h1>Method<\/h1>\n<p>For tandoori chicken, add all ingredients for marinade to a bowl and mix well. Coat chicken with marinade and refrigerate for 3 hours or overnight.<\/p>\n<p>Preheat barbecue grill. Grill chicken until surface is browned (it does not need to be cooked through). Collect the drippings if possible. Set aside.<\/p>\n<p>For butter sauce, heat oil in a frying pan over medium heat, add onion and cook until translucent. Add ginger paste, green chillies, cardamom, mace, nutmeg and cashew paste and fry for a further 2 minutes.<\/p>\n<p>Add tomatoes, stock and salt. Simmer, stirring, occasionally for 5 minutes. Remove from heat and set aside to cool.<\/p>\n<p>Once cool, blend to a pur\u00e9e to make a smooth sauce. Strain through a sieve. Return sauce to pan and cook over low heat. Add the honey, followed by the tandoori chicken and drippings. Stir and simmer until chicken is cooked through.<\/p>\n<p>Sprinkle over garam masala, Kashmiri chilli powder and dried fenugreek leaves. Add the butter and stir until it melts. Finally stir in cream and take off heat.
